Whole Wheat Apple Bread



So despite what my list of blog posts suggests, I do actually make baked items without apples. This recipe doesn't prove it, though...

I ended up making this recipe twice in a week- it was just that good!

I used this Apple Bread recipe and kind of jumped off from there. One of the appeals was that it already called for whole wheat flour and not specifically whole wheat pastry flour, which takes a little effort on my part. As to changes, I only used brown sugar (and a little less), replaced the oil with apple sauce, and used flaxseed for the egg and left out the nuts as both loaves were being shared in larger groups and you just never know about nut allergies. Also, I through in some vanilla and left out the lemon. Success! This was sweet, but not overly so and worked great as a snack or a breakfast treat.

And the recipe:

1 1/2 C whole wheat flour
1 1/2 t ground cinnamon
1/2 t baking soda
1/4 t baking powder
1/4 t salt
1/4 t nutmeg
1 T ground flaxseed
3/4 C brown sugar
1/4 C apple sauce
1 t vanilla
2 T water

Preheat oven to 350 and grease bread pan. In medium bowl, combine dry ingredients minus the sugar. In a large bowl, stir to combine sugar and wet ingredients. Add dry ingredients to wet mixture and stir just until combined. Poor batter into greased pan and bake for 55 to 60 minutes. Let cool for 5 to 10 minutes in pan and then remove to a cooling sheet.
